Cook the hulled peas for approx. 30 minutes in salted water. Then drain them and let them drip well. Peel the garlic and shallot, chop them finely and mix them with the peas, the vinegar, the olive oil, the lemon juice and the honey. Lightly crush it with a fork in order to form a spreadable compound. Let it cool.
Preheat the oven in grill mode.
Leave the slices of bread under the grill 1-2 minutes per side. Season the mixture with salt and pepper, spread on toasted bread and served garnished with parmesan flakes
