Quinoa and Lentils Salad

Quinoa the most desired superfood meets lentil the most loved legume to create a rich and tasty dish!

INGREDIENTS

320 gr of Quinoa Colfiorito®

200 gr of Colfiorito® Lentils

1 cucumber

5 cherry tomatoes

100 gr of rocket

¼ of red onion

Olive oil

Lemon peel

10g of freshly squeezed lemon juice

2 teaspoons of honey

½ teaspoon of mustard

PREPARATION

The Quinoa Colfiorito® doesn’t need any soaking: rinse it well and carry out a visual check. Put a pot of water on the heat, once brought to a boil pour the product and let it cook for about 20 minutes. Follow the same procedure for the lentils - 20 minutes and they will both be ready! Prepare a vinaigrette by combining the juice and zest of fresh lemon, honey, mustard, salt, black pepper and olive oil in a bowl and stir until well blended. Meanwhile, cut the cucumber, cherry tomatoes and red onion into cubes.
On a salad bowl, pour the quinoa, lentils, cherry tomatoes, onion, cucumber, rocket and season with the vinaigrette.
Not only quick and tasty to bring to the table, but also ideal to be consumed on a break at work or at the beach!
