INGREDIENTS FOR 8 TRUFFLES
1 1/2 cups green Azuki beans @Colfiorito
2 tablespoons of olive oil
30g dark chocolate
1 tablespoon raped coconut
1 tablespoon bitter cocoa
2 tablespoons brown sugar
PROCEDURE
First rinse the green Azuki beans, soak them for about 6 hours, cook in boiling water for about 30 to 40 minutes and let cool.
Now put the beans, olive oil and blend well in the blender, then add the sugar and blend again. Finally add the coconut, cocoa and blend everything well with one last stroke of the mixer. If the mixture is too runny and sticky add more coconut.
Now form balls with your hands and place them in the refrigerator for 30 minutes or in the freezer for 15 minutes to firm up. Meanwhile, melt the dark chocolate in a double boiler. Finally coat the balls first in the dark chocolate and then in the coconut rapè. Put back in the refrigerator and after about 20 minutes get ready to enjoy the goodness.
