Crostini with broad beans

INGREDIENTS

  • 300 g of fava beans Colfiorito®
  • salt
  • 2 cloves of garlic
  • 2 tablespoons white balsamic vinegar
  • 1 - 2 tablespoons lemon juice
  • 1 teaspoon of honey
  • 5 tablespoons of olive oil
  • 2 tablespoons fresh mint, chopped
  • pepper, ground fresh
  • 8 slices of white bread
  • parmesan flakes, to garnish

Cook the broad beans for about 5 minutes in water and salt, then drain them and let them drain well. Peel and finely chop the garlic. Mix the vinegar with the lemon juice, honey, garlic, olive oil and mint, season with salt and pepper and season with the broad beans. Let it cool. Roast the slices of bread on both sides for 1-2 minutes under the grill. Fill the roasted bread with broad beans, garnish with parmesan flakes and serve immediately.
