Pumpking and ginger soup

A balanced recipe: the spicy taste of the ginger goes perfectly with the sweet aroma of the pumpkin. A real delicacy for your cold winter evenings

INGREDIENTS

400 g of pumpkin

2 potatoes

2 carrots

1 clove of red onion

2 liters of water

Salt and oil to taste

PREPARATION

First clean the pumpkin, carrots, potatoes and onion and cook them in boiling salted water for about 35-40 minutes. Once all the ingredients have softened, drain them, place them in a saucepan and blend them with the help of a mini-pimer. If the mixture is too thick, you can always add a glass of water. At this point add the ginger and let it infuse for a couple of minutes with the heat off.

Garnish with a drizzle of extra virgin olive oil, golden croutons and serve while still hot.
