The decortication process removes the outer integument and makes the legume quicker to cook. To easily prepare the legume soup, start by rinsing the product under plenty of running water and making a careful visual check. Meanwhile, pour cold water (or vegetable broth) into a saucepan and bring it to a boil. As soon as the water boils, adjust with salt and pour in the mix of legumes. Let the mix cook for about 30/40 minutes, adding herbs to taste during cooking.
Serve the soup hot with a slice of bread and extra virgin olive oil.
