First, boil the mix of cereals and legumes: no soaking is required and 10 minutes of cooking will be enough. Drain and cool under running water, then season with oil, a pinch of salt and pepper.
Meanwhile, prepare the sauce for marinating the fish (which must be very fresh and suitable for raw consumption). Chop the garlic, the white part of the spring onion and the peeled ginger, very finely, season with the soy sauce (and a pinch of spicy sauce to taste) and season the fish.
Slice the radishes, cut the avocado in half and then into wedges, cut the green part of the leftover spring onion into slices.
At this point you can assemble your poke bowl, with a fantasy base of cereals and legumes, marinated salmon, sliced avocado, radishes, a few spinach leaves, slices of lime and sesame (black or white) to taste.
