BEANS AND QUINOA BALLS

An interesting way to invite children to eat pulses

INGREDIENTS

250 g Quinoa
150 g Beans (Borlotti, Cannellini... any you like!)
3/4 tablespoons of grated bread (gluten-free is ok, too)
2 tablespoons of chickpeas flour or Vellutata farina di ceci
Some parsley
2 tablespoons  of Extra Virgin Olive Oil
Salt, Pepper and Turmeric according to taste

PREPARATION

First of all, cook the quinoa and the chosen beans according to the indications written on the package. After cooking, let it go at room temperature.

Put in a mixer the Quinoa, Beans, Vellutata or Chickpeas flour, parsley and turmeric. Mix until well-blended, adding chickpeas flour if the result is too liquid.

The result should be easily workable into balls with your palms, preferably turning it into a play with your children! Roll them on the breading and then align them on an oven tray on baking paper.

Pur a little olive oil and put in an oven at 180°C (356°F) for 20 minutes. An alternative to the oven is to put the in a pan coated in oil and let them cook, rolling them often, until evenly done.
