PREPARATION
First wilt the onion with a tablespoon of oil in a saucepan. When the onion is well browned, add the dried broad beans and let them brown for a few minutes. Add the broth a little at a time and continue cooking until the fava beans have melted.
Keep turning the mixture, leaving it to cook for 30 minutes. If the fava beans have not yet melted, use a blender to create a smooth, glossy cream. Adjust the salt and pepper and serve with a sprinkle of paprika.
