First in a large bowl mix the flour, baking powder, a pinch of salt and the whole-grain sugar. After that add the cinnamon powder, and bitter cocoa. Add now the vegetable milk, oil and sparkling water, which will be used to increase the rising instant pancakes and mix well. To see if the consistency is correct check that the mixture "writes" i.e., that by dripping it with a spoon inside the bowl, traces of it remain on the surface. Grease the pan and place it on the stove. When it is well hot, take the mixture and start pouring it, helping yourself with a ladle, creating rounds. After about 1 minute check that the pancakes come off the pan and turn it over with the help of a scoop.
