Beans are an excellent source of vegetable protein to include in a balanced and healthy diet, especially when combined with cereals f. The Borlotti beans, in addition to being rich in proteins, also provide a lot of fiber and are a natural source of important minerals, such as potassium and magnesium.
Distinctive ingredient of many Italian traditional recipes: pasta and beans, rice and bisi… and thanks to their versatility perfect for salads, tacos, burgers and risottos.
For a classic Borlotti bean soup, soak the legumes for about 8 hours. Once ready, rinse well and carry out a visual check. Meanwhile, pour cold water (or vegetable broth) into a saucepan and bring it to a boil. Season with salt, pour in the dried beans and lower the heat. Cook for about 1 hour on a low heat and almost at the end of cooking add some aromatic herbs (bay leaves, rosemary, oregano). Once ready, serve the mixture hot with a drizzle of extra virgin olive oil and some croutons.
