Pearled barley is one of the oldest and most valuable grains in the world. The grain is subjected to an intense refining process in order to remove the inedible coating and to create a smooth surface. The advantage of this process is mainly related to the soaking time, which is reduced making cooking faster. The delicate nutty flavor and tender consistency make it perfect for risottos, salads and many other first courses.

Our Pearled Barley 100% Italian should always be kept well closed in a cool and dry place, away from sources of light and heat.
This precious ingredient can be used in cooking, as an alternative or in combination with other cereals such as rice and spelt. It can be consumed at lunch and/or at dinner, for the preparation of cold summer salads and first courses with legumes (ex. orzotto with peas).
Pearled barley is very versatile and perfect for a variety of dishes. Salads, soups, stews, risottos even barley meatballs: there are many recipes dedicated to these gems. With a drizzle of extra virgin olive oil and a few basil leaves, you will have a delicious dish that is quick to prepare. A more delicious recipe? Try orzo with squash blossoms or with seasonal vegetables.
Thanks to its thin skin, it does not need to be soaked and is cooked in water in 30/40 minutes from the beginning of boiling, or longer depending on the desired consistency. Remember, however, that they are natural products: rinse well before using them and do a visual check.
