Umbria, defined as the "green heart of Italy", is a land of mountainous and hilly areas, rich in streams and fertile soils. Here, in the wake of a centuries-old tradition, Umbrian lentils of great qualitative value are grown: the characteristics of the soil and the climatic conditions make it unique in its kind. Small, tender with an unmistakable and recognizable flavor due to a varied and unusual color scheme, which can range from light green to dark brown to pink, they are perfect for making tasty and savory dishes, from stewed lentils to meatballs vegetarians.

The Umbrian Lentils are gems of our territory and are rich in nutritional properties: natural source of proteins, fibers and minerals as well as minerals such as copper, potassium, zinc, phosphorus and above all iron (on average they have more than meat!).
In order for the contribution to be significant, it is necessary to consume at least a 50g portion of lentils in a day, also combining them with foods that contain vitamin C (eg citrus fruits, kiwis, peppers, tomatoes, cabbage, broccoli) in the same meal: remember to include it in a varied and balanced diet, always maintaining a healthy lifestyle.
An idea on how to cook them? Lentil soup topped with lemon or orange juice during the winter or a cold salad of lentils, tomatoes and peppers during the summer! For a simple recipe, rinse the lentils well before using them and make a careful visual check. Meanwhile, pour cold water into a saucepan and bring it to a boil. As soon as the water boils, season with salt, add the lentils and lower the heat; if necessary, add hot water during cooking. Cook for about 30 minutes, or longer depending on the desired consistency. Once ready, serve the lentils with a drizzle of extra virgin olive oil.
